This time of year is always crazy busy with various holiday parties, get togethers, pitch-ins, etc. One thing I try to always keep on hand during the holidays is some basic dessert mixes to make when time is limited and I don’t want to go the “store bought” route. One of my family’s favorite “easy” desserts that I make is peppermint brownies.
For this recipe, I just use a box brownie mix (Betty Crocker is my favorite) and follow the directions on the box. I also add in semi sweet mini chocolate chips into the mix. Bake the brownies and top with cream cheese frosting once completely cooled. Crush up some peppermint candy canes and sprinkle on top- I don’t put a ton, just enough for them to be visible and give it that hint of peppermint flavor. I garnish with a candy cane and voila! Super simple and it still looks “festive”. You could also cut them into squares and arrange on a plate and garnish with more candy canes if you are serving them right away.
